Originating from Italy, Bruschetta is truly one of the most popular and beloved dishes globally. The tomato, garlic, and basil combo is simply simpler to bring together and full of the freshness of ripe tomatoes and the tangy aroma of garlic.

Ingredients:

  • 10 cherry tomatoes, finely diced
  • 2 cloves of garlic, minced
  • 1 small red onion, finely chopped
  • 6 fresh basil leaves, finely chopped
  • 2 tablespoons of olive oil
  • Salt and pepper to taste
  • 1 baguette, sliced into 1/2 inch rounds
  • 1/4 cup of melted butter
  • 1/2 cup of freshly grated parmesan cheese

Preparation:

  1. Prepare the Base: Combine tomatoes, garlic, red onion, basil, olive oil, salt, and pepper in a bowl. Allow it to sit for about 20 minutes, allowing all the flavors to blend together. Next, preheat your oven to 375 degrees F (190 degrees C). Brush one side of each baguette slice with melted butter, then place them buttered-side up on a baking sheet. Toast the baguette slices in the preheated oven until golden, about 10 minutes.
  2. Serve and Garnish: Once the baguette slices are toast, arrange them on a serving platter. Scoop a spoonful of the tomato mixture onto each slice. Sprinkle each bruschetta with Parmesan cheese. The slices should be served immediately to maintain their crispy texture. They make a perfect accompaniment to any meal or can be enjoyed on their own with a glass of wine.

Tip:

To enhance the dish, use freshly picked, ripe cherry tomatoes. They are much sweeter and will give your bruschetta a fresh, summery taste. Also, consider using a high-quality olive oil, it can make a huge difference in the taste of the finished dish.
