- Prepare the Base: Wash the potatoes thoroughly and boil in salted water until they are tender but not falling apart. Once cooled, peel the potatoes and slice them into thin rounds. Dice the onions and ham into small pieces. In a large frying pan, heat the vegetable oil and add the onion and ham. Cook until the onion is a light golden brown. Add the potato slices, sprinkle liberally with salt and pepper, and fry until the potatoes are crispy and golden, turning occasionally.
- Serve and Garnish: Once the potatoes are nicely browned, transfer them onto a serving dish. Sprinkle chopped parsley on top and serve immediately. This dish pairs well with roasted meats and vegetables, or can be enjoyed on its own as a hearty brunch option.
Tip:
For a flavorful variance, you can replace the smoked ham with bacon. Similarly, replacing the vegetable oil with lard or duck fat can give the potatoes a more traditional, richer flavor.
