Ingredients:
- 6 egg yolks
- 3/4 cup granulated sugar
- 2/3 cup milk
- 1 1/4 cups heavy cream
- 1/2 teaspoon pure vanilla extract
- 8 ounces Mascarpone cheese
- 1 cup strong brewed coffee, cooled
- 2 tablespoons rum or coffee liqueur (optional)
- 24 packaged ladyfingers
- 2 tablespoons unsweetened cocoa powder
Preparation:
- Prepare the Custard Base: In a medium saucepan, whisk together egg yolks and sugar until well combined. Add the milk and cook over medium heat, stirring constantly until the mixture boils. Boil gently for one minute, then remove from heat and allow to cool slightly. Cover tightly and chill in the refrigerator for an hour.
- Prepare the Mascarpone Mixture: In a separate medium bowl, beat together the cream and vanilla until stiff peaks form. Whisk the Mascarpone into the yolk mixture until smooth.
- Prepare the Ladyfinger Layer: In a small dish, mix together the coffee and rum or coffee liqueur if you are using it. Split the ladyfingers in half, and dip both sides into the coffee/liqeur mixture, then arrange in the bottom of a serving dish. Spread half of the Mascarpone mixture over the ladyfingers.
- Repeat Layers: Dip the rest of the ladyfingers in the coffee/liqueur mixture and arrange over the Mascarpone layer. Spread the remaining Mascarpone mixture over the second layer of ladyfingers. Dust with the cocoa powder. Cover and refrigerate for at least 2-3 hours to allow flavours to meld together before serving.
Tip:
Use Italian-made ladyfingers (Savoiardi) and genuine Mascarpone cheese as they will give you the best and most authentic taste. The tiramisu is best served cold, so let it refrigerate overnight for optimal flavour.
