Vegetarische Spinat-Gemüse-Lasagne, or Vegetarian Spinach Vegetable Lasagne, is a beloved dish that has its roots in traditional Italian cuisine. Loved by vegetarians and vegetable-lovers alike, this dish is rich, hearty, and packed with flavour. It brings together a delightful combination of whole grain lasagne sheets, leafy green spinach, a medley of colourful vegetables, béchamel sauce and melted cheese baked to a golden perfection.
Ingredients:
- 9 Whole grain lasagne sheets
- 2 cups Fresh spinach, washed and chopped
- 1 Carrot, finely chopped
- 1 Zucchini, finely chopped
- 1 Red bell pepper, finely chopped
- 2 cups of shredded Mozzarella cheese
- 2 cups of Tomato sauce
- 2 cups of Béchamel sauce
- 2 cloves Garlic, minced
- 1 tbsp Olive oil
- Salt and pepper to taste
Preparation:
- Prepare the Base: Preheat your oven to 180 degrees Celsius. In a large frypan, heat the olive oil over medium heat. Add the garlic and sauté until it's fragrant and golden. Add the chopped vegetables including the spinach, carrot, zucchini, and bell pepper. Season with salt and pepper, and let it cook until the vegetables are soft. Drain any excess liquid and set aside. Cook the lasagne sheets according to the package instructions, then drain and set aside. In a deep baking dish, spread a thin layer of béchamel sauce on the bottom. Arrange a layer of cooked lasagne sheets over the sauce, followed by a layer of cooked vegetables, a layer of tomato sauce, and a generous sprinkle of shredded cheese. Repeat these layers until all ingredients are used, finishing with a layer of béchamel sauce topped with shredded cheese.
- Serve and Garnish: Cover the baking dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for another 10-15 minutes or until the cheese is bubbly and golden brown. Let the lasagne sit for 10 minutes before slicing and serving. Garnish with a few fresh basil leaves if desired. Serve hot with a side of crusty Italian bread or a simple green salad.
Tip:
For an even more flavourful lasagne, try roasting the vegetables before adding them to the lasagne. This will give them a deeper, more intense flavour that will make your vegetarian lasagne absolutely irresistible. You can also add other veggies of your choice like mushrooms or eggplant to make this dish even more nutritious.
