Ingredients:
- 400 grams of pasta (penne or farfalle)
- 1 small red onion, finely chopped
- 1 red bell pepper, finely chopped
- 1 cucumber, finely chopped
- 2 hard-boiled eggs, diced
- 250 grams of mini sausages, sliced
- 50 grams of pickles, finely chopped
- 3 tablespoons of mayonnaise
- 1 tablespoon of mustard
- 1 tablespoon of white wine vinegar
- Salt and pepper to taste
- Chopped fresh parsley to garnish
Preparation:
- Prepare the Base: Cook your pasta of choice in salted boiling water according to the instructions on its packaging, then drain and rinse under cold water. Let it cool. In a large bowl, combine the cooled pasta, finely chopped onion, bell pepper, cucumber, diced hard-boiled eggs, sliced mini sausages, and chopped pickles.
- Make the Dressing: In a separate bowl, mix the mayonnaise, mustard, and white wine vinegar. Season with salt and pepper to taste.
- Mix and Chill: Pour the dressing over the salad and mix everything together until the salad is thoroughly coated. Cover and refrigerate for at least an hour to let the flavors meld together beautifully.
- Serve and Garnish: When you’re ready to serve, give the salad one more good stir, then garnish with chopped fresh parsley. Serve chilled.
Tip:
If you want an extra creamy pasta salad, you can add a couple of tablespoons of the pickle juice into your dressing. This not only adds to the creaminess but also gives a fantastic tangy taste.
