Ingredients:
- 1 cup of all-purpose flour
- 2 tablespoons of sugar
- 1 teaspoon of baking powder
- 1/2 teaspoon of baking soda

- 3/4 cup of buttermilk
- 1/4 cup of milk
- 1 large egg
- 2 tablespoons of unsalted butter, melted
- Extra butter for pan
- Maple syrup (optional)

Preparation:
- Prepare the Base: First, in a large bowl, whisk together the flour, sugar, baking powder, baking soda and salt. In a separate bowl, whisk together buttermilk, milk, egg and melted butter. Pour the wet ingredients into the bowl with the dry ingredients and stir until just combined. It's okay if there are a few lumps.
- Cook the Pancakes: Heat a large skillet or griddle over medium heat and add some butter to grease. Pour about 1/4 cup of batter into the skillet for each pancake. When you see bubbles forming on the surface of the pancakes and the edges look set, flip them over and cook for another 1-2 minutes until golden brown and cooked through.
- Serve and Garnish: Serve the pancakes immediately, stacked high. Top with a pat of butter and a generous pour of maple syrup. For an extra touch, add some fresh fruits like blueberries or slices of banana.
Tip:
For an extra fluffy pancake, avoid over-mixing the batter as it can make the pancakes tough. Also, keep the skillet at medium heat. Higher heat can cause the pancake to burn before the inside is fully cooked.
