Master the Art of German Cuisine: Ultimate Guide to Making Perfect Creamy Milk Rice

Der perfekte Milchreis, or the perfect rice pudding, is a beloved dish originating from Germany. It is a traditional comfort food that has warmed the hearts and bellies of many generations in German households. This humble and creamy dish is typically served with sugar, cinnamon, and often, a spoonful of apple or cherry compote.

Ingredients:

  • 1 cup of round grain rice (ideal would be short-grain pudding rice)
  • 1/4 teaspoon of salt
  • 4 cups of milk (more if you prefer it creamier)
  • 2 tablespoons of sugar (can be adjusted to taste)
  • 1 teaspoon of vanilla extract or a packet of vanilla-sugar
  • A pinch of cinnamon (optional, for serving)
  • Sugar (optional, for serving)
  • Apple or Cherry compote (optional, for serving)

Preparation:

  1. Prepare the Base:
    1. In a large saucepan, bring milk to a boil.
    2. Add the rice and salt to the boiling milk, then stir well.
    3. Reduce the heat to low, allowing the mixture to simmer. Be sure to stir frequently to avoid the rice sticking to the bottom of the pan and burning.
    4. As the rice starts to soften and the milk begins to be absorbed (about 20-30 minutes), add sugar and vanilla. Continuously mix to prevent the sugar from settling at the bottom of the pan.
    5. Keep stirring on low heat until the rice is completely soft, and the texture of the rice pudding is creamy. This could take another 20-30 minutes.
  2. Serve and Garnish:
    1. Once the rice pudding is ready, serve it in bowls. You may sprinkle it with a bit of sugar and cinnamon to taste, and if you like, add a side of your favorite fruit compote - apple or cherry are our recommendations!

Tip:

For a truly traditional German experience, try adding a bit of butter to the rice while it's cooking. It enhances the richness of the dish! Also, do not skip the frequent stirring; it helps to give a wonderfully creamy texture to your Milchreis!
