Frische Tomatensuppe, translating to Fresh Tomato Soup, is a staple in the German kitchen. It's made with ripe tomatoes, bringing out a fresh and tangy flavor that's unlike any other. Ingredients:
- 2 pounds of ripe tomatoes
- 2 tablespoons of olive oil
- 1 large white onion
- 2 garlic cloves
- 1 liter of vegetable broth
- 1 teaspoon of sugar
- Salt and freshly ground black pepper to taste
- A handful of fresh basil leaves
- 100 ml of heavy cream
Preparation:
- Prepare the Base: Start by washing your tomatoes and making a cross-like incision at the bottom of each. Place them in a large pot of boiling water for a minute and then transfer them into cold water. The skin should peel off easily now. Next, chop the tomatoes, onions, and garlic. In a large pot, heat the olive oil over medium heat and sauté the onions and garlic until they turn golden. Add the tomatoes, vegetable broth, and sugar. Let it simmer for about 20 minutes.
- Blend and Serve: After your soup has simmered, transfer the content of the pot into a blender. Blend until smooth and then put it back into the pot. Now, add the heavy cream, salt, and black pepper. Stir well. When serving, garnish with fresh basil leaves for added flavor.
Tip:
