This dish, commonly known as Chinese fried noodles with chicken, egg and vegetables, is a staple in Chinese cuisine. Originating from the streets of China, it's a quick and versatile dish that has spread across the globe, finding its way into homes and restaurants, and giving food lovers a taste of authentic Chinese flavors.
Ingredients:
- 200g fresh noodles
- 200g chicken breast, cut into thin slices
- 2 eggs, beaten
- 1 cup mixed vegetables (carrots, bell peppers, peas)
- 2 cloves garlic, minced
- 1 medium onion, sliced
- 3 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1/2 teaspoon white pepper
- 2 tablespoons vegetable oil
- Salt to taste
- Spring onions for garnish
Preparation:
- Prepare the Base: Heat one tablespoon of the vegetable oil in a wok or large skillet over medium-high heat. Add chicken slices and stir-fry until they are thoroughly cooked. Remove and set aside. In the same pan, add the onions, garlic and mixed vegetables. Stir-fry until they are soft and slightly brown. Set aside with the chicken.
- In the same wok, add the remaining oil and pour in the beaten eggs. Scramble the eggs and then add the noodles. Stir well to break up the noodles. Add the soy sauce, oyster sauce, white pepper and salt. Return the chicken and vegetable mixture back to the wok and toss well with the noodles. Continue to cook for 2-3 minutes until everything is well combined.
- Serve and Garnish: Plate the noodles, garnish with spring onions. Serve hot.
Tip:
To enhance the flavor, you can add a teaspoon of sesame oil at the end of cooking. Also, always make sure your wok or pan is hot before adding your ingredients, this ensures they get the proper sear and don't become soggy.
