The Ultimate Authentic German Chicken Soup Recipe

Omas Hühnersuppe, or Grandma's Chicken Soup, is a comforting traditional German dish that has been passed down through generations. Known for its rich and nourishing qualities, it is typically served during cold months or when someone in the family is feeling under the weather. This simple yet hearty soup reflects the practical and flavourful nature of German cuisine.

Ingredients:

  • 1 whole chicken
  • 4 carrots
  • 3 celery sticks
  • 2 leeks
  • 1 large onion
  • 3 cloves of garlic
  • 3 liters of water
  • 1 bunch of fresh parsley
  • Salt and pepper to taste

Preparation:

  1. Prepare the Base: Begin by cleaning and chopping all the vegetables into large chunks. Place the whole chicken into a large pot along with the vegetables, and cover with water. Bring everything to a boil, then reduce the heat and let it simmer for about 2 hours. Skim off any foam that appears.
  2. Strain and Chop: After the soup has simmered, remove the chicken and strain the broth to remove the vegetables, saving the broth for later. Allow the chicken to cool enough to handle, then remove and discard the skin and bones, chopping the meat into small, bite-sized pieces.
  3. Recombine and Season: Return the chopped chicken and broth to the pot. Season generously with salt and pepper, and allow the soup to simmer for an additional 30 minutes.
  4. Serve and Garnish: Chop the fresh parsley and sprinkle over the soup immediately before serving. Serve the soup hot, with a side of crusty bread.

Tip:

For an even more robust flavor, consider roasting the chicken and vegetables slightly before adding them to the pot. This will give your Omas Hühnersuppe a deep, intense flavor that is truly comforting.
